Smoked Tri-tip tacos aren’t something that I make very often, but they are something I absolutely love.  For these tacos I combined 2 different cooking methods, smoking and reverse searing, to achieve very tender and very flavorful taco.  Before I smoked the tri-tip I used my Spicy Beef Rub to give it that nice kick I always look for in a taco.  I topped these tacos with some fresh onions and peppers and served it with Smoked Tomato Salsa.
 
Depending on the size of your tri-tip this will make enough for 4-6 people.
 

Smoked Tri-tip Tacos

For the rub in this I use my Spicy Beef Rub.
I made this in a pellet smoker over a hardwood blend.

Ingredients

  • 2.5lb Sirloin Tri-tip

  • Spicy Rub

  • 1T Olive Oil

  • Small Tortillas

  • Taco Toppings
  • 1 Red Onion (sliced)

  • 2 Jalapenos (sliced)

  • 2 Limes (wedged)

  • Mini Sweet Peppers (sliced, amount depends on preference)

  • Fresh Cilantro

Directions

  • Coat tri-tip with olive oil, then heavily season meat with rub. Allow to sit for at least 1hr, but overnight would be best.
  • Start smoker and set to 225. When smoker is ready, place tri-tip in smoker, and let smoke for 1 hour before checking temp of meat. Smoke until internal temp reaches 125. (This will be rare inside, but with the sear will finish out at medium-rare. If you like you meat more well-done just remove it about five degrees before it reaches your desired temp.)
  • Remove tri-tip and let rest for 15min.
  • While tri-tip is resting prepare toppings.
  • Turn smoker up as high as it can go in order to sear the tri-tip. ( I use a smoker with a sear function over the firebox, if you don't have this I would recommend starting a gas grill on high or heating up a skillet for 10 min.
  • Once grill, or frypan, is hot sear off each side of the tri-tip just until it develops a slight char. Remove from heat and allow to rest for 10 min.
  • After meat has rested, slice across the grain as thinly as possible, this will ensure the meat is tender.
  • Assemble the tacos however you like them and enjoy!
