I love fresh salsa. I also love to smoke things. So, I combined them in this recipe and the results were spot on.  There is just enough smoke to add a different dimension of flavor, but the added lime juice still gives it that fresh pop.  The smoky citrusy flavors go great with chips or use it for a topping on most Mexican food.
 
This will make about 7 cups of salsa.
 
 

Smoked Tomato Salsa

Subtle smoky flavors add to an already delicious salsa

Ingredients

  • Smoked
  • 24 oz 24 Fresh Tomatoes (Halved)

  • 5 oz 5 Sweet Peppers (Halved)

  • 3 Large 3 Jalapenos

  • 1 Medium 1 Purple Onion (Skin Removed, Halved)

  • Fresh
  • 2 2 Limes (Juiced)

  • 5 Cloves 5 Fresh Garlic

  • 1 1 Fresno Chili

  • 1.5 oz 1.5 Fresh Cilantro

  • Dry
  • 2 t 2 Kosher Salt

  • 1 t 1 Black Pepper

  • 1/2 t 1/2 Cumin powder

Directions

  • Start smoker and set to 200.  While smoker is coming to temp place sliced tomatoes and sliced sweet peppers in disposable roasting pan.
  • When smoker is ready place pan of tomatoes and sweet peppers inside. Place on the smoking rack the onions, jalapenos, and poblano peppers. 
  • After 1 hour remove everything form the smoker.
  • Place garlic cloves, cilantro and lime juice in blender then blend until as smooth as possible. Chop onions, jalapeno peppers, Fresno chili pepper, and poblano pepper and place into blender. Add salt, pepper, and cumin to the blender. Finally add in the tomatoes and sweet peppers along with any juice that has been created in pan.  Blend everything together until everything is chopped and combined. Taste salsa and adjust seasoning levels with more salt and pepper.

Notes

  • I like to use a blender fir this salsa so it has a smoother consistency. If you prefer chunkier salsa use a food processor
  • For more heat add in more Fresno chili or crushed red pepper flakes.
