Cool, crisp, and a tiny bit spicy is how I would describe this cocktail. The jalapeno adds a layer of flavor with a very small background of spice. It pairs well with anything on a hot day but I had this with some spicy Mexican food.
If you don’t like slightly spicy drinks just skip the jalapeno. It’s just as delicious without.
Jalapeno Pineapple Mojito
Ingredients:
- 2oz White Rum
- 1.5oz Pineapple Juice
- 5 Large Mint Leaves
- 1/2 Lime (Juiced)
- 1 Bottle of Jarritos Lime Soda
- 5-10 Thin Slice of Jalapeno (fresh)
Directions:
- Fill a low-ball glass 3/4 full of ice, add the lime juice, jalapenos, and mint leaves. Muddle until the mint and jalapenos have broken up and are spread around the ice.
- Add in rum and pineapple juice. Stir to combine.
- Top off with Jarritos lime soda and garnish with lime slice, a few thin slices of jalapeno, and mint leaf.
