Cool, crisp, and a tiny bit spicy is how I would describe this cocktail.  The jalapeno adds a layer of flavor with a very small background of spice.  It pairs well with anything on a hot day but I had this with some spicy Mexican food.

If you don’t like slightly spicy drinks just skip the jalapeno.  It’s just as delicious without.


Jalapeno Pineapple Mojito

Ingredients:

  • 2oz        White Rum
  • 1.5oz     Pineapple Juice
  • 5 Large Mint Leaves
  • 1/2        Lime (Juiced)
  • 1 Bottle of Jarritos Lime Soda
  • 5-10 Thin Slice of Jalapeno (fresh)

Directions:

  1. Fill a low-ball glass 3/4 full of ice, add the lime juice, jalapenos, and mint leaves.  Muddle until the mint and jalapenos have broken up and are spread around the ice.
  2. Add in rum and pineapple juice. Stir to combine.
  3. Top off with Jarritos lime soda and garnish with lime slice, a few thin slices of jalapeno, and mint leaf.
