This is my take on a classic Paloma. I love the flavor of grilled pineapple so I decided to turn it into a juice for this cocktail. For the fizzy component I decide to use some ginger beer because ginger and grapefruit go so well together. The combination of the grilled pineapple and grapefruit mixed with the ginger beer completely cover up any alcohol flavor and make this drink delicious

This drink would go great with ant spicy Mexican food. I would recommend you try it with some Spicy Grilled Sirloin Steak Fajitas. The grilled flavors in both that fajita recipe and this cocktail would pair perfectly.

If you have never had a Paloma then you should give this one a try.  It might be dangerously good!

Grilled Pineapple and Grapefruit Paloma

This is a 2 part recipe. 1st part is how to make the grilled pineapple juice. 2nd part is how to make the cocktail

Ingredients

  • Grilled Pineapple Juice
  • 2 2 Fresh Pineapples

  • Non-Stick Cooking Spray

  • Grilled Pineapple Grapefruit Paloma
  • 3 oz 3 Grilled Pineapple Juice

  • 4-6 oz 4-6 Ginger Beer

  • 1.5 oz 1.5 Grapefruit Juice

  • 1.5 oz 1.5 Tequila (I used Repesado.)

  • 1/2 oz 1/2 Simple Syrup

  • 1/2 1/2 Lime (Juiced)

  • 1 1 Grilled Pineapple Wedge (Garnish)

  • Margarita Salt

Directions

  • Grilled Pineapple Juice
  • Start Grill and leave heat on high.
  • Remove pineapple top, bottom, and skin. Cut into 1" thick slices horizontally across the pineapple.
  • When grill is hot, spray grill grates with non-stick spray, and place pineapple slices evenly throughout. Be careful for flareups when spraying hot grill.
  • Grill pineapple for 5-8 minutes per side, or until nice char marks start to form on each side. Remove from grill.
  • Cut pineapple slices into quarters, remove the core sections from each piece of pineapple, and place into a blender. Set aside a few nicely grilled pieces for garnish. Blend for several minutes until everything is as smooth.
  • Strain pineapple through a mesh strainer and into a resealable container. Refrigerate until ready to use. This will keep in refrigerator for up to 5 days.
  • Grilled Pineapple Grapefruit Paloma
  • Add grilled pineapple juice, tequila, grapefruit juice, lime juice, and simple syrup to a cocktail shaker containing a few ice cubes.
  • Prepare pint glass by wetting rim of glass and dipping into the margarita salt. Fill glass half full with ice.
  • Vigorously shake the cocktail shaker until ice has dissolved. Pour into prepared glass then top with ginger beer until full. Garnish with grilled pineapple wedge.
