This is my definition of quick and easy comfort food.  It comes together very quickly. It is nice and cheesy and creamy but very filling. The best part is it look like a lot more work than it actually is!

Cheese Tortellini in Creamy Spinach Sausage Sauce

Ingredients

    2oz fresh grated parmesan
    4oz shredded mozzarella
    1lb Italian sausage
    1.5c heavy cream
    1/2 medium sized onion (approximately half cup)
    3 cloves smashed/minced garlic
    5oz fresh baby spinach
    1 can petite diced tomatoes ( 14.5 oz)
    2Tbl of butter
    1 large package of pre-made cheese tortellini ( about 2 lbs)
    2 T of dried oregano
    Salt and pepper to taste

Serve 4-6 people    

                                                                                                                                                            
 

Directions:    (pictures follow with coordinating step numbers)

  1. Start boiling salted water for noodles.
  2. Remove sausage from casings ( if that’s how yours came) and sauté in pan over medium high heat until browned and cooked through. remove sausage and most of the  grease then set aside.
  3. Dice onion and mince garlic. Grate parmesan cheese.
  4. Sauté onion until tender then add in garlic and cook for 1 min.
  5. In same pan add in the butter. Once melted add in onions and brown until tender. Add in garlic and cook for 30sec.
  6. Add can of tomatoes, including juices, and the oregano to the onion garlic mixture. stir to combine. Cook 3 to 5 min over medium high heat, or until about half the juice has reduced and the tomatoes have tenderized.
  7. Add to the pan the cream and the spinach and stir to combine. Cook until spinach has started to wilt (3-5) and cream has reduced by 1/2.
  8. While cream and spinach are reducing cook tortellini by about half the amount of time suggested (mine said 4 min so i cooked for 2)
  9. After cream and spinach combo is reduced and wilted add in the tortellini and gently stir to coat the pasta.
  10. Add in the sausage followed by the mozzarella and 3/4 of the grated parmesan, stir until sauce thickens and its nice and gooey. adjust seasoning with salt and pepper until just right
  11. Serve with some of the remaining parmesan on each plate.
