This simple arugula salad is dressed with a quick balsamic vinaigrette and topped with some fresh strawberries and feta cheese.  This salad is a great side dish and makes a nice light, but very flavorful lunch.
 
The dressing makes approximately 3/4C and is enough for 3-4 salads.  The dressing can be stored in a sealed container and mixed up before your next use.

Arugula and Strawberry Salad with Balsamic Vinaigrette

This is for 1 salad so adjust accordingly.

Ingredients

  • Balsamic Vinaigrette
  • 1/4C Olive Oil

  • 1/4C Balsamic Vinegar

  • 1T Dijon Mustard

  • 1t Black Pepper

  • 1t Kosher Salt

  • 2C Arugula (Washed)

  • 2T Feta Cheese (Crumbled)

  • 5 Strawberries (Sliced)

  • 1 Baguette (Optional)

  • 2t Olive Oil (For Coating Baguette)

Directions

  • Make vinaigrette dressing by combining all ingredients in a small bowl and whisking until it is fully combined.  Set aside.
  • Start grill, slice baguette in half and lightly coat insides with olive oil. Grill bread until it develops a slight char. Set aside.
  • In a medium mixing add the arugula and about 2T of the vinaigrette, then lightly toss until fully coated, add more vinaigrette if desired.
  • Place coated arugula into bowl, then top with fresh strawberries and feta cheese. Serve with grilled baguette on the side.
