Crispy, cheesy, and covered in bacon. That’s exactly what these potatoes are. This is a faster way to get the classic appetizer. These make the perfect quick appetizer for a party or a great side dish. As an appetizer and as a side dish the proportions are the same, I would estimate 1-2 small Russet potatoes per person.
Potato Skin Bites
Ingredients: (I am not including amounts because it will depend on how many people you are making this for.)
- Russet Potatoes (small or medium sized works best)
- Bacon (3 slices per whole potato)
- Cheddar Cheese (1/3C per whole potato)
- Green Onion
- Sour Cream
- Cooking Spray
- Salt and pepper
- Garlic Powder
Directions:
- Preheat oven to 400. Wash potatoes and cut into 1/4″ to 1/2″ coins.
- Place potatoes not overlapping on a baking pan lined with parchment paper. Spray potatoes with cooking spray and lightly season with salt, pepper, and garlic powder.
- Cook until 1st side of potatoes starts to brown, about 20 min. Then flip and spray with more cooking spray and season. Cook an additional 20 min.
- Top each potato with bacon and cheese and place back into oven for 5 min.
- Remove from oven and top with sour cream and green onions.
