Crispy, cheesy, and covered in bacon.  That’s exactly what these potatoes are.  This is a faster way to get the classic appetizer. These make the perfect quick appetizer for a party or a great side dish. As an appetizer and as a side dish the proportions are the same, I would estimate 1-2 small Russet potatoes per person.
 

Potato Skin Bites

Ingredients:  (I am not including amounts because it will depend on how many people you are making this for.)

  • Russet Potatoes (small or medium sized works best)
  • Bacon (3 slices per whole potato)
  • Cheddar Cheese (1/3C per whole potato)
  • Green Onion
  • Sour Cream
  • Cooking Spray
  • Salt and pepper
  • Garlic Powder

Directions:

  1. Preheat oven to 400.  Wash potatoes and cut into 1/4″ to 1/2″ coins.
  2. Place potatoes not overlapping on a baking pan lined with parchment paper. Spray potatoes with cooking spray and lightly season with salt, pepper,  and garlic powder.
  3. Cook until 1st side of potatoes starts to brown, about 20 min. Then flip and spray with more cooking spray and season. Cook an additional 20 min.
  4. Top each potato with bacon and cheese and place back into oven for 5 min.
  5. Remove from oven and top with sour cream and green onions.
