For me a good jerk seasoning should be more flavorful than it is spicy, that’s not to say this rub doesn’t pack some heat. This seasoning does provide a solid base for you to add in more heat if you desire. I like to us this seasoning mixture as both a rub and as a seasoning to mix into burgers or add to anything that just needs a little flare. This seasoning works amazing as a rub or dry marinade. For it to be a dry marinade allow your protein to rest for at least 30 minutes the flavors with penetrate into the meat.
This is one of my favorite rubs for Beer Can Jerk Chicken.
Jerk Seasoning/Rub

minutesThis rub or seasoning mixture has a good balance of sweet and spicy. To add more spice add in ground habanero pepper or red pepper flakes.
Ingredients
1/4C Kosher Salt
1/4C Brown Sugar
2T Coriander(Course Ground)
1T Ancho Powder
1T Tajin Clasico Seasoning
2t Black Pepper (Course Ground)
1t Garlic Powder
1t Onion Powder
1t Cumin
1t Poultry seasoning
1/2t Chili de Arbol Powder
1/2t Ground Mustard
1/4t Ground Cloves
1/4t Nutmeg
1/4t Cinnamon
Directions
- Combine all ingredients and mix until everything is combined. The brown sugar will sometimes clump, so use a whish or fork to break it up.
- Store in empty spice container for easy use.
