The uses for a rotisserie chicken seem to be endless. With the cost of food being so high it is really hard to beat the value of a Costco rotisserie chicken. This recipe uses only 1 breast from the chicken, then is combined with a ranch spread, and some crispy bacon make a delicious combination. I topped that with some gooey pepper jack cheese and fresh jalapenos and the results were spot on. This flatbread is so simple, but that doesn’t mean it isn’t delicious.
Depending on what you are in the mood for this flatbread also makes a delicious flatbread sandwich. To make that just skip the toasting of the flatbread, bake everything on the bread the same way, and add some lettuce once its all ready.
Either way this recipe is the perfect budget friendly, flavor packed dish.
Chicken Bacon Ranch Flatbread

Ingredients
1 Breast From Rotisserie Chicken (I Prefer Costco)
2 Premade Pita Breads (This will work with Naan as well.)
1C Pepper Jack Cheese (Shredded)
1/2Lb Bacon
2 Jalapenos (Thinly Sliced)
2 Green Onions (Thinly Sliced)
1/3C Mayo
1/3C Milk
1T Ranch Dressing Powder
Non- Stick Cooking Spray
Directions
- Preheat oven to 400.
- Fry bacon until crisp, then chop into smaller pieces, and set aside.
- Make ranch spread by whisking together the milk, mayo, and Ranch dressing powder.
- Remove 1 Chicken breast from rotisserie chicken and shred.
- When oven is ready line baking sheet with parchment paper and place flatbreads on top. Lightly spray first side of flatbread with cooking spray and place in oven for 2 minutes. After 2 minutes, flip, then spray second side with cooking spray and cook for an additional 2 min.
- Assemble the Flatbreads by evenly spreading the Ranch spread on each flatbread. Then placing bacon, chicken, jalapenos, and topping everything with the Pepper Jack cheese.
- Bake for 10 minutes, or until cheese has fully melted.
- To serve slice into quarters, and top with fresh green onions and more sliced jalapenos
Notes
- This can also be make as a Pita sandwich by skipping step 5 and just assembling the flatbread the same way. Then after cheese has melted remove from oven, place lettuce inside, and fold in half.
