A buttery center with a crispy skin is how I would describe these potatoes.  They are almost like a French fry but don’t require a deep fryer, or any special tools. Just place them on a cookie sheet and bake.
 

These are quick and easy, but make the perfect side dish, or an easy appetizer.  I served them with a chimichurri sauce for dipping.  I would recommend you make extras because these will go fast.

This will serve 2-4 people as a side dish.

Crispy Oven-fried Potatoes

Estimate 1-2 medium potatoes per person and adjust recipe accordingly.

Ingredients

  • 4 - 6 Yukon Gold Potatoes

  • 2T Butter

  • 1/4t Garlic Powder

  • 1/4t Black Pepper

  • 1/4t Kosher Salt

  • 1/4t Dried Parsley

  • Fresh Parmesan (For topping, Optional)

Directions

  • Preheat oven to 400. Wash and slice potatoes into 1/4 inch thick slices.  Evenly spread out on a metal baking tray lined with parchment paper.
  • Top each potato with a small amount of butter, then season lightly with salt, pepper, and garlic. (You do not want to use all of the seasoning mixture on the first side, save about 1/2 of it for the second side.)
  • Bake in oven for 15-20 minutes, or until potatoes start to lightly brown.
  • After potatoes have browned on 1 side, flip them. and lightly season second side with parsley and a light dusting of salt, pepper, and garlic.  
  • Bake for an additional 15-20 min.  The potatoes are done when they are golden brown and slightly crunchy.
  • Remove from baking tray and top with lightly grated parmesan.

I am attaching a picture of how the potatoes look before cooking so you have an idea of how to spread apart the 2T of butter.
