This sauce is one my favorite toppings for a steak, but it works well with anything. I like to use cilantro and parsley when I make it, if you don’t like cilantro just leave it out. It also makes a great marinade for chicken. Overall this is just an excellent sauce that adds an extra layer of flavor to anything.
I have posted this as part of my Flank Steak recipe, but decided that I make it often enough to post on its own.
Chimichurri

minutesThe perfect sauce for a grilled steak.
Ingredients
1/2C Olive Oil
1/4C Red Wine Vinegar
1oz Fresh Flat Leaf Parsley
1 Shallot (Small, Diced)
3 Cloves Fresh Garlic (Minced)
1/2oz Fresh Cilantro (Optional, but if you skip add in extra parsley.)
1/2 Fresno Chili (Jalapeno can be used here too.)
1oz Green Onion
1 Lime (Juiced)
Salt and Pepper
Directions
- Combine all ingredients, skipping the salt and pepper, in a blender and blend until smooth.
- Adjust Seasoning levels with salt and pepper.
- Let rest for 15 minutes before serving
- Store in sealed container in refrigerator for up to 5 days.
